Drop Scones (thick pancakes)

Method
  1. Grease and heat a griddle pan
  2. Sieve flour, add sugar and beaten egg, mix quickly into batter adding buttermilk gradually
  3. Pour into large jug and pour out small quantities onto well greased and heated griddle, turn when heat bubbles burst on top side.

NOTE: Heat Griddle before you begin to mix and mix lightly and quickly.

  • 225g/8oz Neill's Self Raising Soda Bread Flour
  • 75g/3oz Caster sugar
  • 1 Egg
  • 300ml / ½pt Buttermilk
