Drop Scones (thick pancakes)
- Grease and heat a griddle pan
- Sieve flour, add sugar and beaten egg, mix quickly into batter adding buttermilk gradually
- Pour into large jug and pour out small quantities onto well greased and heated griddle, turn when heat bubbles burst on top side.
NOTE: Heat Griddle before you begin to mix and mix lightly and quickly.
- 225g/8oz Neill's Self Raising Soda Bread Flour
- 75g/3oz Caster sugar
- 1 Egg
- 300ml / ½pt Buttermilk
