Wholesome Brown Bread

Method
  1. Preheat the oven to 200°C ( 400°F, Gas mark 8)
  2. Grease a 1lb loaf tin
  3. Sift the flours, baking soda and salt into a mixing bowl
  4. Add the bran, porridge oats and sugar and stir to mix
  5. Beat the eggs and buttermilk together in a bowl and pour into the dry ingredients
  6. Mix everything gently to form a dough
  7. Turn the dough into the prepared loaf tin
  8. Bake for 40mins until well risen and cooked
  9. Leave in the tin to cool for 10mins then turn out onto a wire tray
  10. Leave to cool before completely before slicing


This bread makes a valuable contribution to the energy content of a healthy diet. It is high in fibre and has no added fat. The sugar included is optional

Ingredients
  • 175g ( 6oz) Neill's wholemeal flour
  • 110g ( 4oz ) Neill's Golden Fleece
  • ½ teaspoon salt
  • 1 Tbsp bran
  • 1 Tbsp porridge oats
  • 2 Tsp baking soda
  • 1 medium egg
  • 250ml ( ½ pt) Buttermilk
  • ½ teasp brown sugar ( optional)
