Fat Free Sponge Mix

Fat free sponges are simple to prepare and quick to cook. For a light sponge it is important to include as much air as possible during the preparation process.

  1. Preheat oven to 200°C ( 400°F) Gas mark 6
  2. Grease and line 2 18cm ( 7") cake tins
  3. Break the eggs into a bowl and add the caster sugar
  4. Whisk the eggs and sugar until they are thick and creamy
  5. Sift the flour into the bowl and carefully fold in using a metal spoon
  6. Divide the mixture between the two tins and turn the tins to allow the mixture to level off without spreading
  7. Bake for 15-20 minutes until golden, set and springy
  • 75g ( 3oz) Neills Golden Fleece
  • 75g ( 3oz ) Caster sugar
  • 3 medium eggs
