Scotch Shortbread

  1. Sieve flour and salt, rub in butter.
  2. Add sugar and knead mixture until it binds together.
  3. Lightly roll or shape into ½" thick rounds.
  4. Place on a baking sheet or oven tin, crimp edges and mark into wedges.
  5. Bake in a moderate oven 150°c (300°f/Gas Mark 2) for 40-45 minutes.
  6. Cool on a tin.

  • 175g/6oz Butter
  • 35g/1½ oz Caster Sugar
  • Pinch of Salt
