Ingredients

  • 450 g / 1 lb Neill's Self Raising Soda Bread Flour
  • 1 egg
  • 250 ml / ½ pt buttermilk or milk
  • salt and pepper

Filling/Topping

  • 8 rashers of bacon
  • 200 g / 8 oz sausage (e.g. pork or chorizo)
  • 110 g / 4 oz baby tomatoes
  • 25 g / 1 oz sundried tomatoes
  • 2 eggs (lightly beaten)
  • 1 tablespoon parsley (finely chopped)
  • 2-3 scallions (finely chopped)
  • 50 g / 2 oz grated cheese (e.g. cheddar)

Method

  1. Pre-heat the oven to 220°C / 195°C Fan / Gas Mark 6-7.
  2. Place approximately 450 g / 1 lb Soda Bread Mix into a bowl, add milk, 1 egg, black pepper and mix with a spoon to form a soft dough.
  3. Mould the dough into either a round or rectangular tin.
  4. In a frying pan lightly cook together the sliced sausage, bacon, scallions and baby tomatoes. Transfer to the top of the soda bread mix, pour over the lightly beaten egg, parsley and grated cheese.
  5. Bake in the oven until well cooked, approximately 30 minutes. Garnish with parsley.
  6. Serve hot, cut into chunks with freshly brewed coffee.
